Having barbecues in the backyard for friends and family is one of my favorite summertime activities. Lighting up the grill, piling on the burgers and hot dogs, and setting up a buffet table with side dishes for everyone to savor is always so much fun. Typically, I cook the typical barbecue fare, such as macaroni, grilled corn on the cob, and potato salad. However, I recently discovered a classic recipe for creamy cucumber salad that I had entirely forgotten about and that will go perfectly with our next cookout!
Growing up, we definitely ate cucumber salad, as I’m sure you can recall! If not, though, I think you’ll still enjoy this easy yet delicious meal. This recipe is the ideal side dish for the rest of your barbecue because it’s light, nutritious, and slightly tart. This recipe has various modifications, but the tried-and-true components are as follows:
Cucumbers, thinly sliced (number will vary depending on number of guests)A big dollop of sour cream (for a healthier option, use plain Greek yogurt)one or two garlic clovesRed onion, thinly sliced (a 1/4 to 1/2 red onion should be adequate).A quick spritz of lemon juiceMany freshly sliced dillsTo taste, add salt and pepper.
To prepare, simply combine all the ingredients in a big bowl and serve! This recipe’s greatest feature is that you may customize it by adding whatever ingredients you choose. In my opinion, it would taste fantastic with some finely chopped celery and dill pickles for an extra sour crunch! A little crumbled feta would be excellent too. If dill isn’t your favorite herb, you could still use fresh mint in this recipe, even though dill really makes it.
